1 bag (1 lb) dried brown lentils, sorted, rinsed
2 medium carrots, chopped (about 1 cup)
1 large onion, chopped (about 1 cup)
3 cloves garlic, finely chopped
2 cartons (32 oz each) non fat chicken broth (8 cups)
1 can (6 oz) tomato paste
1/2 cup dry sherry or non fat chicken broth
1 and 1/2 teaspoons ground cumin
1 teaspoon dried thyme leaves
Spray crockpot with cooking spray.  Add all ingredients and mix.  Cook on low 6-8 hours till lentils are soft.

Wonderfully Fragrant, this Soup is Hearty and Will Have Your RV Smelling Like You’ve Been Standing Over the Stove All Day!




  • 1 pound dry cannellini beans
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 3 cloves garlic, chopped
  • 1 can (14 1/2 ounces)stewed tomatoes
  • 1 1/2 teaspoons dried Italianseasoning
  • 8 ounces low-sodium ham, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Crusty bread (optional)
  • Fresh parsley (optional)


1. Place beans in a large pot and cover with water. Bring to boiling, cover and turn off heat. Allow to soak overnight.

2. Coat slow cooker bowl with nonstick cooking spray. Drain beans and add to bowl. Add 4 cups water, onion, carrots, garlic, tomatoes, Italian seasoning and ham. Stir to combine, breaking up tomatoes with a wooden spoon.

3. Cover and cook on HIGH for 6 hours.

4. Season with salt and pepper; mash beans slightly to thicken soup. Serve with crusty bread and garnish with parsley, if desired.

Cajun Fish Soup

   Super Simple Supper!





4 cups stir-fry frozen vegetables

4 cups low fat chicken broth

2 tsp. Cajun season

12 ounces Tilapia, sliced (thickest pieces available)

One 14 1/2 ounce can diced tomatoes


1.  Combine 4 cups stir-fry frozen vegetables, 4 cups low fat chicken broth and 2 tsp. Cajun seasoning.  Bring to boil.

2.  Cover and simmer 4 minutes.

3.  Add 12-ounces sliced Tilapia and one 14 1/2 ounce canned diced tomatoes.

4.  Cover and simmer 3 minutes

This Taco Soup is So Easy!

Fast and Flavorful!




1 lb. ground turkey breast

1 large onion, chopped

One 1 1/4-ounce package dry ranch dressing mix

One 1 1/4-ounce package dry taco seasoning mix

One 15-ounce can pinto beans

One 15-ounce can hot chili beans

One 15-ounce can whole kernel corn

One 15-ounce can stewed tomatoes (Mexican flavor)

One 15-ounce can stewed tomatoes (any flavor)


1.  Brown the meat and onions and drain

2.  Mix ranch dressing mix and taco seasoning mix into the meat mixture

3.  Without draining, add all other ingredients

4.  Simmer about 1 hour

Sweet and Sour Beef Cabbage Soup

Sweet and Sour Beef Cabbage Soup

 This is a Really Delicious, Hearty and Healthy Soup.





1 lb. extra lean ground beef

6 cups fat free beef broth

1 15-ounce can creshed or diced tomatoes

4 cups chopped cabbage

1 large yellow onion, diced

4 stalks of celery, finely chopped

1 tsp. canola oil

1 TBSP. tomato paste

1 1/2 tsp. caraway seeds

2 TBSP. honey

1 TBSP. paprika

1/4 cup cider vinegar

1 1/2 tsp.salt

1/4 tsp. pepper 


1.  Set a Dutch oven over medium heat, and add in the oil

2.  Add beef and caraway seeds and cook, stirring and breaking up the beef with a spoon, until it is mostly browned, about 4 minutes

3.  Stir in onion and celery; cook, stirring, for 2 to 3 minutes more

4.  Sir in broth, tomatoes, tomato paste, honey and paprika and adjust the heat so the mixture boils gently.  Cook for 8 to 10 minutes to blend the flavors

3.  Stir in cabbage, vinegar and salt 7 pepper and cook just until barely tender, 3 to 4 minutes more.

Prep Time:  10 minutes

Cook Time:  25 minutes
