Diabetic Friendly, Fresh and Yummy!

INGREDIENTS

  • 4 clementines, peeled and sectioned
  • 1/2 cup fresh cranberries, coarsely chopped*
  • 1/3 cup finely chopped red onion
  • 1 tablespoon sugar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 jalapeño pepper, seeded and finely chopped

DIRECTIONS

1. Cut clementine sections in half. Combine all ingredients; cover and let stand 1 hour.

*Frozen cranberries, thawed, may be substituted.

Try This Twist! Orange-Cranberry Salsa: Substitute 2 navel oranges for clementines. Makes 1 1/2 cups.

Hollandaise Sauce

 Our Friends at Weight Watchers Did it Again!  Created a Creamy and Smooth Hollandaise Sauce!

 

 

INGREDIENTS

2 large uncooked egg yolk(s)   
 2 Tbsp water     
 1/3 cup(s) regular butter, melted     
 2 tsp fresh lemon juice     
 1/4 tsp table salt, or to taste     
 1/4 tsp white pepper, or to taste     

 

DIRECTIONS

In a small metal bowl, using a stainless steel whisk, whisk egg yolks and water until completely blended and frothy.

  • Place bowl over double boiler over low heat; whisk constantly until thickened. Remove from heat and continue whisking to help cool a little.
  • Slowly whisk in melted butter; whisk in remaining ingredients. Serve warm. Yields about 1 tablespoon of sauce per serving.

Lightened Up Classic Pesto Sauce

INGREDIENTS

2 Tbsp pine nuts   
 2 cup(s) basil, leaves, fresh     
 1/2 cup(s) reduced-sodium chicken broth     
 1/4 cup(s) grated Parmesan cheese     
 1 Tbsp olive oil     
2 clove(s) (medium) garlic clove(s), peeled     
 1/2 tsp table salt    

 

DIRECTIONS

 

  • Place pine nuts in a small skillet and set pan over medium heat. Cook until nuts are golden, shaking pan frequently to prevent burning, about 3 minutes. Transfer nuts to a plate to cool.
  • In a blender or food processor, combine nuts, basil, broth, cheese, oil, garlic and salt; process until smooth and thick. Yields about 1/4 cup per serving.

No Cook Easy Tomato Salsa

This is Fresh and Zingy Tomato Salsa that Doesn’t Require Cooking and Whips Up in a Jiffy. 

Serve over potatoes, rice, as a dip, or on your favorite Mexican food

 

 

INGREDIENTS

 

  • 3 1/2 cups chopped cherry tomatoes (about 2 pounds)
  • 1 clove garlic, minced
  • 1/4 cup minced flat-leaf parsley leaves
  • 1/4 cup minced basil leaves
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp coarsely chopped fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp crushed red chili pepper flakes
  • 1/4 tsp freshly ground black pepper

DIRECTIONS

Combine all the ingredients in a large stainless steel or glass bowl. Let the sauce sit at room temperature for at least 30 minutes before serving.

Red Pepper, Cucumber and Tomato Relish

Great for Dressing Up Chicken Breast or Fish

 

 

 

  INGREDIENTS

2 large red peppers, finely diced
1 English cucumber, finely diced
3-4 Roma tomatoes, seeded and finely diced
1/4 red onion, finely diced
1/8 cup fresh chopped parsley or cilantro
1 tbsp good olive oil
2 tbsp good balsamic vinegar
Salt and freshly ground pepper
1 tsp dried oregano

DIRECTIONS

1. In the bottom of a large bowl, whisk together the vinegar, olive oil, parsley, oregano, salt, and pepper.

2.  Add all of the veggies and toss to coat.  This keeps well in an airtight container for 3-4 days.

Creamy Turkey or Chicken Gravy

 INGREDIENTS

1 cup chicken broth (low sodium) or defatted turkey drippings
1/4 cup fat-free milk
2 tablespoons dry white vermouth (optional)
2 tablespoons all-purpose flour
1/2 teaspoon pepper, or to taste
1/2 teaspoon dried sage
DIRECTIONS

Heat the broth in a medium saucepan over medium heat. Put remaining ingredients in a small bowl and whisk until smooth, or put in a jar with a tight-fitting lid and shake until smooth. Gradually stir into chicken broth. Cook over medium heat for 3 to 5 minutes, or until thickened, stirring constantly.

Pineapple Salsa

Pineapple Salsa 

 Great for BBQ Pork 

 

 

 

 INGREDIENTS  

1 fresh pineapple, trimmed and diced

1 red bell pepper

1/2 cup minced cilantro

1/2 jalapeno pepper, minced

2 TBSP. fresh lime juice

1/4 tsp. salt

DIRECTIONS

Combine all ingredients and mix well.  Refrigerate for at least an hour before serving to blend flavors.
