Great for Dressing Up Chicken Breast or Fish

 

 

 

  INGREDIENTS

2 large red peppers, finely diced
1 English cucumber, finely diced
3-4 Roma tomatoes, seeded and finely diced
1/4 red onion, finely diced
1/8 cup fresh chopped parsley or cilantro
1 tbsp good olive oil
2 tbsp good balsamic vinegar
Salt and freshly ground pepper
1 tsp dried oregano

DIRECTIONS

1. In the bottom of a large bowl, whisk together the vinegar, olive oil, parsley, oregano, salt, and pepper.

2.  Add all of the veggies and toss to coat.  This keeps well in an airtight container for 3-4 days.
