Cajun Fish Soup

   Super Simple Supper!

 

 

 

  INGREDIENTS

4 cups stir-fry frozen vegetables

4 cups low fat chicken broth

2 tsp. Cajun season

12 ounces Tilapia, sliced (thickest pieces available)

One 14 1/2 ounce can diced tomatoes

DIRECTIONS

1.  Combine 4 cups stir-fry frozen vegetables, 4 cups low fat chicken broth and 2 tsp. Cajun seasoning.  Bring to boil.

2.  Cover and simmer 4 minutes.

3.  Add 12-ounces sliced Tilapia and one 14 1/2 ounce canned diced tomatoes.

4.  Cover and simmer 3 minutes
